What this doesn't cover

Knowing where a calculator stops is what makes the rest of it trustworthy.

  • The Australian tablespoon is the trapAt 20 ml it is a third bigger than everyone else’s, and Australian recipes simply say "tablespoon". Use the wrong one for a raising agent or a spice and you are out by 33%.
  • Level, not heapedEvery figure here assumes a level spoon. A heaped tablespoon of a powder can hold half as much again, and no table can tell you how much you heaped it.
  • Salt is not one ingredientFine table salt is about 288 g per US cup. Flaky and coarse sea salts are roughly half that by volume, so swapping one for another spoon-for-spoon roughly halves or doubles the seasoning.

About 2.1 US tablespoons, or just over 2 UK ones. A US tablespoon of butter is around 14.2 g.

How many grams is a tablespoon of sugar?

About 12.5 g in a US tablespoon of granulated or caster sugar, or 12.7 g in a 15 ml UK one. Brown sugar packed is a little heavier at around 13.8 g.

How many grams is a tablespoon of flour?

About 7.8 g in a US tablespoon of plain flour. Flour is one of the lightest things in a kitchen by volume, which is why a spoonful weighs so much less than a spoonful of sugar.

How many teaspoons are in a tablespoon?

Three, in both the US and metric systems. So a US tablespoon is 3 × 4.93 ml and a metric one is 3 × 5 ml. Australia keeps 5 ml teaspoons but uses a 20 ml tablespoon, so an Australian tablespoon is four teaspoons.

Is a UK tablespoon the same as a US one?

Near enough. 15 ml against 14.8 ml is a difference of about 1.4%, which no recipe will notice. The Australian 20 ml spoon is the one that matters.
